I bought the plgug-in partial payment.
How can I view the balance to be paid to the customer in the mail?

First of all, thank you very much for buying the plugin.
Currently, you will get the email after making the remaining payment using the partial payment plugin.
Also, you can view the remaining payment amount in the user dashboard. Also, you can view the payment gateway as well in from the booking tab of user dashboard.

Antoher question, relative to User dashboard.
Currently, in order to access the second “bookings” section, the user must make a path that is not very user friendly (see video: http://italianyes.it/userdashb.mp4).

Regarding the balance to be paid, is there a way that we can modify the outstanding amount for a particular client, maybe creating a coupon?
The reason is that a client would normally be given a loyalty discount but made the booking and paid the deposit before we created a sale price for them. So now we need to retrospectively apply the discount.

Actually, WP Travel plugin provides the feature of providing coupon system for the customer but this feature will be applied only before making booking of the trip. So, the feature you have requested regarding providing discount even after trip has been booked(with payment) is not available.
