In the checkout page, there are lots of filed are compulsory for you to fill before submitting the booking form. You can check the booking form by your self from our official demo link:

Also my sites ‘notes’ section is way larger than the demo.

When we inspected your site URL we found that the note in the booking form is displaying fine as you can see in the screenshot below:
Now regarding your query about removing the field in the booking form, please mention the field that you want to remove so that we can help you further.

Are there any responses re making fields in the check out process mandatory, we are getting bookings but we have no idea on which date the service is required as they don’t fill in the field

Can you please mention which field you are referring to?
Also, almost all the fields in checkout page are mandatory as you can see in screenshot below and customer needs to fill out those fields.

It the date of service field in the attachment, we cant seem to make this mandatory although we tick this in the set up.
Also, we have spotted another issue, when you select the number of people in the initial booking box, when you go to the next part the number of people are missing, so the buyer has to redo? (See screenshots)

Regarding date of service field in the attachment, we are not quite clear with the query. Can you please provide us with specific screenshot of the field you are referring to?
Also, regarding number of people are missing, can you please provide us with site URL so that we can inspect the issue further?

I have responded to your emails but have heard nothing back, we also seem to have a Stripe issue in that n one can charge a card through the checkout process now.
Any chance this can get looked at as site now not really working
